I voted for Touch of Evil because I think it is just a excellent movie even in it's current "director's cut" edition. Had Welles been allowed to finish the film as he wanted, would it be similar, different, shorter, longer?
I recently saw Ambersons again and remembered why I like it. But even as some say that its bastardized version is still one of the best films of all time, I'm not one of those people. It's very good, but even having read the Carringer book, I don't think I'd call it one of the best of all time. It's long and some of the scenes just didn't capture me the way TOE did.
